There are products made to clean grout haze off of tile, but I don't know if it would assist in loosening some of the excess you have. If that does not work, go to one of your local tile shops (not big box store) and ask them about using some type of cleaning product. In the meantime, to clean up the excessive grout left on items, I would start with warm water and a sponge. Have a tile setter (one that comes well recommended by your local tile shops for doing good work and solving problems) come in and look at the tile and see if he/she can remove the grout out with a fein saw, or something similar, and regrout. If not, then you want to know that before you have the tile fixed. Hopefully the issues can be addressed without having to remove any tile.

Have a plumber come in to look at all of the plumbing to see what he needs to do to get everything properly installed. Tile should be done by professional tile setters and plumbing should be done by licensed plumbers - and even more than that, these individuals should be familiar with working in a remodeling situation not just new construction as the two are totally different.

But, there is no one person who is an expert at everything. It's a difficult thing to try to communicate to people - we all fall for it some time or other.
